The use of herbal spices as natural flavor enhancers
and as natural preservatives is well known. However, with increased
research, new chemical and biological analytical techniques have
emerged which have cast some doubt into the substances used as
chemical agents. As a result of this, new natural alternatives
have been looked into. In an effort to better use oregano as an
agricultural product, its use as a natural flavor enhancer, antioxidant
and antimicrobial agent has been explored due to the qualities
attributed to its leaves, and the essential oil.
